100% McLaren Vale fruit - Sellicks Hill. Picked end of February, made 2 batches. Batch 1 - 80% de-stemmend over 20% whole bunch. Left on skins until dry and pressed to seasoned barrels. Batch 2 - 20% de-stemmend over 80% whole bunch. Fermented dry on skins and pressed to barrel, continuous ferment from the whole bunch in barrel. Blended about 1 month before bottling.
