Cinco Sentidos is a representation of small-scale maestro mezcaleros that produce agave spirits with complex flavors. We select high-quality distillates that represent the various production processes, agave diversity, and traditions and talents of Mexico's master distillers of agave.
In August of 2023, Eduardo "Lalo" Perez Cortés, son of Eleuterio "Tio Tello" Perez Ramos, distilled this small batch of Espadin con Frutas at his father's small palenque, located in the village of El Nanche, Oaxaca. To make this batch, Lalo roasted several tons of "quiotudo" Espadin in an underground oven for eight days. After the roast, Lalo crushed the cooked agaves with machetes and wooden mallets in order to create a fermentable mash. He then heaped that mash into sabino cypress tanks, where it was allowed to ferment with well water for over two weeks. Once the fermentation was complete, Lalo distilled the fermented Espadin once in a pair of copper alembic stills to create several hundred liters of "xixe.” Then, to make this special batch, he added nanche, banana, crabapple. apricot and pineapple to the newly made xixe, then distilled it a second time in the same set of Copper alembic stills. Proofed with heads, hearts, and tails by Lalo. Approximately 100 lites produced; bottled October 2023.
