The La Porte Saint Jean, Peau Let 2019 is a unique macerated wine created by Pauline Foucault, the wife of Sylvain Foucault. Made with destemmed Chenin Blanc, a process normally used for red wines, the La Porte Saint Jean offers a 4 to 5 week maceration period without extraction, resulting in a gentle infusion. It should not be mistaken for an orange wine, as there is no oxidation, only a careful balance of maceration and tannins. This wine is then aged for 24 months, with half in barrique and the other half in stoneware egg, from the same vineyards as La Perlee. These vines are between 70 and 100 years old, and the 100% Chenin Blanc cuvee "Peau Let" is a true testament to their age and quality.
