Description
Region: Burgundy, France
Appellation: Volnay
Type/Style: Red Wine
Grapes: Pinot Noir
From one of Burgundy’s most exciting new voices, Bastian Wolber’s “Laisse Tomber” Volnay 2022 is a striking expression of Pinot Noir that balances energy, finesse, and terroir.
Origin & Production
-
Sourced from the Grands Poisots parcel in Volnay, planted on red iron–rich soils reminiscent of Pommard.
-
Grapes come from older vines (40–55 years) and are farmed with organic principles (not certified).
-
Winemaking is low-intervention: 100% whole-cluster fermentation (carbonic / semi-carbonic influence), ambient yeasts, minimal extraction (cap wetting, gentle foot treading), followed by 17–18 months in used barrels. No fining or filtration; minimal sulfur added only prior to bottling (~10 ppm).
Tasting Notes
On the nose, this Volnay opens with perfumed red cherry, wild strawberry, and a hint of rose petals, interlaced with subtle earth and forest floor notes. The whole-cluster approach lends spicy undertones—think cinnamon, red pepper, and a touch of herbal nuance.
On the palate, the wine is elegant and toned: silky red fruit, poised acidity, fine-grained tannins, and a minerals-driven finish that lingers. It’s Burgundian in its restraint, yet beguiling in its expressive purity.
Why It’s Special
-
This is Wolber’s first fully self-produced vintage in his own Volnay cellar.
-
His style leans toward generosity and clarity rather than extracted power—every element feels dialed-in.
-
The wine exemplifies the power of site and minimal intervention, showcasing transparency over manipulation.
Food Pairing & Serving
Pairs elegantly with roast chicken, turkey, or lighter red meat dishes. Serve at about 14–16 °C (57–61 °F). It’s approachable now, but will gain complexity over the next 5–10 years.
