Julien Guillot cuvée of Mâcon Rouge Selection Massale is composed of 30 different varieties of gamay which are between 70 & 90 years old. All the parcels are planted on limestone, high altitude, without too much top soil. After hand-harvdesting, the grapes were fermented in open top wood fermenters. Aged in wood before bottling unfiltered. Zero sulphur added.
