Cinco Sentidos is a representation of small-scale maestro mezcaleros that produce agave spirits with complex flavors. We select high-quality distillates that represent the various production processes, agave diversity, and traditions and talents of Mexico's master distillers of agave. 

This small bottling Marteno con Espadin was made by third-generation Mescalero “Tio” Pedro Pascual Hernandez and his nephew Eduardo “Lalo” Barriga. It is the first time this style of “Mezcla” made by the two has been exported to the U.S. They worked together to harvest the cultivated Espadin (a. Angustifolia) & Marteno (an a. Karwinskii cultivar micro-endemic to the Central Valleys of Oaxaca), then roast them in an underground conical oven with guamuche and oak firewood for five days. After the roast, the Mescalero duo uncovered the earthen oven and then allowed the cooked agaves to rest for approximately ten days before using a small mechanical mill to grind them into a fermentable mash. That mash was allowed to dry ferment for three days and then fermented with well water for another two weeks. Once Tim Pedro determined that the mash was ready to distill, Lalo double-distilled it in a set of clay pots at their palenque, “La Esperanza,” in Santa Catarina Minas, Oaxaca. 92 Liters were produced in September 2023, and 55 Liters were bottled for U.S. export.
