Tiny producer in Saint Joseph who started in 2011 with vines from his grandfather. Owner Jean-François Malsert used to own a small wine bar in Tournon, specializing in top producers in the region. Vineyards are all farmed organically, with natural vinification in the cellar: indigenous yeasts, neutral wood or amphora for aging, little or no SO2 in elevage (just at bottling).
40% destemmed, 60% whole cluster. 2 week fermentation in stainless steel, remontage for one week followed by light pigeage 1x per day for the other week. The idea is to achieve elegant tannins and not too much extraction. Aged 50% 600L neutral demi-muids, 50% Flextank
This cuvee name means badger in Occitan, a wink at the animal who eats Jean-Francois' grapes.
