Single parcel of Chardonnay, Orthogneiss soils, Biodynamically farmed, rotating cover crops of grains and wild flowers. Received by gravity, destemmed and vinified in in underground tank with indigenous yeast. All fruit is hand-harvested. 8 months of skin maceration in amphora. Continuing his exploration of the energy exchange between wine and vessel, this amphora aged Chardonnay is a lively and textured orange wine with apricot aromas and driving acidity. Just stunning and a truly exciting addition to Fred's Vin de France lineup.
