The Domaine du Chapitre Vineyard has been practicing sustainable farming for many years, and will start the organic certifcation in 2022. For example, they have been using soft tillage, letting more land to go uncultivated and also increased biodiversity with beehives throughout in the vineyard. The grapes are picked and sorted at the winery in Saint Romain sur Cher. The yields are between 35 and 45hl/ha. The Sauvignon Blanc grapes are cold soak before pressing. A pneumatic pressing machine is used for all the wines. The wines are lightly filtered and sulfur is added in low quantity before bottling. Vintage 2020 Sauvignon Blanc de Touraine was exceptional with ideal rainfalls and perfect sunshine. During Spring and Summer, the high temperature led to an early harvest in the 3rd week of August. The wines are quite aromatic with ripe flavors of citrus and grapefruit, mouthfeel is full and yet fresh, nice and long finish showing a slight mineral quality.
