La Bergerie is the only blend released by Domaine du Gringet in their debut vintage, comes from the south-facing foothill terroirs of Le Pré Milleret and Chez Reydet. The pressing process involves a gentle, seven-hour cycle using a horizontal pneumatic press, followed by a 24-hour settling period during which the must is deliberately exposed to oxygen. The wine then undergoes spontaneous fermentation in tank and is aged for about 9 months on fine lees in concrete eggs (70%) and stainless steel (30%). Once bottled, it is aged for an additional 10 months. Winemaker Vincent Ruiz oversees this meticulous process.
