Rising from the Ayse commune, the Altesse vineyard at Domaine du Gringet is located in Aubeterre, sharing a hillside with La Paille. Separated by the Mimonet road, these two terroirs host shallow white marl soils, where vines planted by Dominique in the 1990s must work vigorously to produce small but concentrated berries. Vinification for this single-plot cuvée follows the same careful process as their Gringet wines, with gentle pressing, 9 months of fermentation and aging in egg-shaped concrete tanks, and an additional 10 months of aging in glass after being bottled unfined and unfiltered. Master winemaker Vincent Ruiz oversees the production.
