The Domaine Elodie Jaume was born in 2017, resulting from a sharing of the family property. The audacity and the desire to sign her own wines push Elodie, a young winegrower, to cultivate 5 hectares of family plots. His open-mindedness and his thirst for discovery led him to fly away to vinify for 6 months at the Cooper Mountain Estate in Oregon in the United States. Back in Châteauneuf-du-Pape, organic farming and biodynamic practices are obvious to her to express the full identity of these great terroirs. Herbal teas and biodynamic preparations are applied to the letter, plot by plot. These reinforce the life and vitality of the soil and plants. From the start, she made the choice, in order to better understand the intrinsic identity of each of her 8 plots, to separate the grapes in small vats. Very quickly, Elodie decided to vinify as naturally as possible. No oenological input is used. Aging in concrete vats gives the wines a fine tannic structure, delicacy and freshness. On the northern slopes of the Cabrières plateau, old Grenaches and 70-year-old Mourvèdres sink deeply into a clayey-sandy soil with rolled pebbles. These two great Rhone grape varieties express all their purity, finesse and freshness. The Côtes-du-Rhône plots of Domaine Elodie Jaume are located in the immediate vicinity of the Châteauneuf-du-Pape appellation in the town of Orange at a place called Champauvin. The red clay soils with rolled pebbles coupled with the blend of 70% Syrah and 30% Grenache give a fresh, fruity and gourmet wine. Vinified without any oenological input and without added sulphites.
