The orgins of the Domaine can be traced back to 1885, where it was called Domaine Jean Boillot. After joining the Domaine in 2008 Guillaume has taken over full production of both white and red wine since 2019. With his Chardonnay vinification Guillaume is extra focused on pressing methods and timing of presses to maintain freshness and minerality. For the Pinot Noir, his integrative method in which the Reds macerate in small oak barrels and get turned 6 to 8 times per day, make his texture and aromatics a focal point.
