From 65-year-old vines growing on south-facing sandy soils in Courthezon, Châteauneuf-du-Pape, this is declassified to VDF as the Will's Wine cellar sits just outside of the appellation zone. He adds 7% Grenache Blanc to add lightness and floral tones. With 100% whole-bunch, spontaneous fermentation, aged in a demi-muid barrel.
